"Balsam seats a small house and we have our basic seasonal menus. That gives me the advantage of being able to shop daily and being in the downtown corridor of such an ethnically diverse city let's me get the best of what I see, in season and locally grown as often as possible. So I have good choices for daily specials and if I don't like something I see, well, that's not on the menu tonight.
I'm happy with my butchers and I know some good purveyors of fish and produce . . .  so the day-to-day menu's not written in stone - but I  keep it tasty!"
